So this is my first healthy recipe! Its my very own peach salsa that is super easy and delicious! I made this for a potluck at school and it was a hit! Everyone loved it, so I hope you do too!
What you will need:
- 4 regular sized peaches (between 2 and 3 cups diced)
- 2 large tomatoes (about 4 cups diced)
- 2 garlic cloves (minced)
- 1 jalapeño (de-seeded and minced)
- 1/3 cup cilantro (leaves picked from stem and roughly chopped)
- 1 tablespoon of lime juice
- Spices (used *cayenne pepper, *crushed red pepper flakes, *cumin, *chili powder)
Preparation:
- Peel and dice peaches.
- Dice tomatoes (Peeling is optional. Other salsa recipes may tell you to peel the tomatoes too, but I didn't for this recipe).
- Mince garlic cloves.
- De-seed and mince jalapeño.
- Pull cilantro leaves off of stem and chop them.
- Combine all ingredients and drizzle lime juice over the top of everything.
- Dash your select spices onto the mixture until desired taste is achieved.
Enjoy with your favorite chips, on a salad, or on top of meats (I would recommend chicken or fish)!
